Pair our wine with KAJKAB chocolate

“Our approach to creating our chocolate is very similar to the process of making wine. We only use two natural ingredients..cacao beans and organic cane sugar… to let each variety show its unique character.”

All of our single-origin chocolate is made with just cacao beans and organic unrefined sugar; no added cacao butter, lecithin, or vanilla. Our chocolate is free of soy, dairy, eggs, and gluten, and it is made in a factory that does not process dairy, peanuts or tree-nuts with the exception of coconut.

“Our approach to creating our chocolate is very similar to the process of making wine. We only use two natural ingredients..cacao beans and organic cane sugar… to let each variety show its unique character.”

What is KAJKAB?  The word itself is Mayan, and means CACAO. The single origin chocolates offered here are made from
cacao beans grown on individual farms in Ecuador, Peru, Madagascar, Tanzania, Viet Nam, and the Dominican Republic.
Each possess different flavor characteristics reflecting their varied ‘terroir’, very much like fine wines.  The beans are grown in their country of origin, and then fermented, carefully roasted and finally milled into small granules (nibs). The resulting ‘massecuit’ is then blended with some percentage of unrefined organic cane sugar and ‘conched’.  Conching is the lengthy process (it can take days) during which only the milled beans and sugar are mixed until the mixture becomes chocolate as we think of it. No other ingredients are added. The chocolate you taste here represents the highest quality pure dark chocolate available, each offering a unique tasting experience by itself or paired with one of our select wines.

KAJKAB chocolates are made locally in Tecate, Baja California by master chocolate maker Diego Caballeros. They are 73% and 80% cacao, and are offered as 1.5” diameter ‘palettes’, and there are 15 palettes to each lined ‘round’.  Also offered are sealed bags of a delightful tea, cacao nibs, and the roasted unmilled cacao beans themselves.  The ‘rounds’ of KAJKAB chocolate palettes are priced at $12 and $14. The tea is available for $8, and the cacao nibs are $10 per bag.

If you love chocolate, you’ll definitely want to visit us and try all of the KAJKAB products…they’re simply AMAZING!

“This vineyard is beautiful, and the wines are delicious. I was surprised at how many varietals they have. Huge variety of wines. The winery is on a property that has been owned by the same family for over 100 years.”
