Experience the unparalleled quality of our signature olive oil
Savor the exceptional and distinct taste: from centuries-old olive trees delivering a rich and authentic experience to your table, capturing the essence of our historic land.
At our family estate, we take pride in every step of the process, from cultivation to bottling. Each bottle is a testament to our commitment to quality, tradition, and sustainability.
Our olive oil is not just a product; it’s a story, a journey that spans generations and reflects the dedication we have to preserving the authenticity of our land.
Indulge in the exquisite flavors of our family estate’s olive oil, a culinary treasure cultivated from olive trees planted on our grounds in 1887. Nestled in the heart of our historic estate, these ancient trees have witnessed generations of care and commitment, resulting in a product of unparalleled quality.
The distinct flavors of San Diego and Dulzura play a crucial role in shaping the rich character of our olive oil. Embracing the coastal influence of San Diego, our olives benefit from the salty breeze and the unique microclimate, imparting a subtle essence of the sea to the fruit. This coastal nuance adds a delicate and refreshing note to our olive oil, creating a harmonious balance that mirrors the region’s vibrant culinary identity.
As we venture into Dulzura’s inland valleys, the terroir contributes a depth of flavor derived from the region’s fertile soil and warm climate. The earthy undertones, coupled with the sun-kissed sweetness of locally sourced produce, infuse our olive oil with a robust and well-rounded character. Each bottle becomes a testament to the agricultural bounty of the land, capturing the essence of the Mediterranean climate that has made Southern California a haven for olive cultivation.
Hand-harvested with meticulous attention to detail, our olives are plucked at the peak of ripeness to capture the fullest essence of their flavor. The olives undergo a careful cold-pressing process, preserving the natural goodness and distinct character of the fruit. The result is a premium, extra virgin olive oil with a robust and well-balanced taste, characterized by notes of fruitiness, peppery spice, and a subtle hint of earthiness.
Pair our exquisite olive oil with our fine wines, both crafted with the same passion and care, to elevate your culinary experience. Discover the legacy of our family estate through the rich flavors and history encapsulated in every drop of our meticulously crafted olive oil.
Elevate your culinary experience today! Order now and bring the essence of our historic estate to your table.
Pair our wine with KAJKAB chocolate
“Our approach to creating our chocolate is very similar to the process of making wine. We only use two natural ingredients..cacao beans and organic cane sugar… to let each variety show its unique character.”

All of our single-origin chocolate is made with just cacao beans and organic unrefined sugar; no added cacao butter, lecithin, or vanilla. Our chocolate is free of soy, dairy, eggs, and gluten, and it is made in a factory that does not process dairy, peanuts or tree-nuts with the exception of coconut.
“Our approach to creating our chocolate is very similar to the process of making wine. We only use two natural ingredients..cacao beans and organic cane sugar… to let each variety show its unique character.”
What is KAJKAB? The word itself is Mayan, and means CACAO. The single origin chocolates offered here are made from
cacao beans grown on individual farms in Ecuador, Peru, Madagascar, Tanzania, Viet Nam, and the Dominican Republic.
Each possess different flavor characteristics reflecting their varied ‘terroir’, very much like fine wines. The beans are grown in their country of origin, and then fermented, carefully roasted and finally milled into small granules (nibs). The resulting ‘massecuit’ is then blended with some percentage of unrefined organic cane sugar and ‘conched’. Conching is the lengthy process (it can take days) during which only the milled beans and sugar are mixed until the mixture becomes chocolate as we think of it. No other ingredients are added. The chocolate you taste here represents the highest quality pure dark chocolate available, each offering a unique tasting experience by itself or paired with one of our select wines.
KAJKAB chocolates are made locally in Tecate, Baja California by master chocolate maker Diego Caballeros. They are 73% and 80% cacao, and are offered as 1.5” diameter ‘palettes’, and there are 15 palettes to each lined ‘round’. Also offered are sealed bags of a delightful tea, cacao nibs, and the roasted unmilled cacao beans themselves. The ‘rounds’ of KAJKAB chocolate palettes are priced at $12 and $14. The tea is available for $8, and the cacao nibs are $10 per bag.
If you love chocolate, you’ll definitely want to visit us and try all of the KAJKAB products…they’re simply AMAZING!
